I have been making this practically every other week since it goes within two days. This recipe is so quick and easy, I cannot stop raving about it! Not only did the fudge type gooey goodness NOT stick to the pan but left me with a pan that hardly looked used at all it just kinda slid out. Excellent and delicious. Thanx for a great recipe. It helped with the mess and also added a great smore like flavor. Next time we are going to prepare Rocky Roads microwave heating and stiring ever 30 seconds. A great treat. I used super chunk peanut butter and cut down a bit on the chocolate chips.
Best if kept in the fridge as they get gooy left out. I wasn't sure whether to cool the melted chips before adding the marshmallows so just waited a minute or two. Some of the marshmallows melted and it looked great.
I tried making this recipe two different ways. The first time I melted the marshmallows completely and used the chunky peanut butter also. It could be compared to a lighter kind of fudge it was fantastic. The second I followed the original recipe and enjoyed them just as well.
Rating: 4 stars. I can easily make it vegan for my partner who is vegan by using vegan block instead of butter and veggie marshmallows. And for the non-vegan version I add some melted milk chocolate to the top of rocky road before chilling, Rocky Roads. My partner loves the vegan version and the kids and I love the non-vegan one. This a great, versatile recipe. Very little to go wrong and saves wasting bits of ingredients I have hanging around.
I got given 3 boxes of Turkish delight by Father Christmas. Perhaps his elves had been at the sherry. The rose flavoured cubes 70g found themselves chopped up into tiny cubes, rolled in icing sugar and flung in to this recipe.
Now I will be asking for three boxes every year. What an amazing recipe! I usually put in a handful of sultanas and some crushed up walnuts, but otherwise just stick to the main ingredients.
I made this with my Beavers group, worked great and tasted fab. Used broken up candy canes to make it Christmas themed. I made a gluten free version of it and added currents. It was simple and delicious.
I always swap out golden syrup for black treacle which gives it a bit of extra umph. I also never add fruit or nuts but instead try out a new chocolate bar each time - Cadbury's caramel bars work Rocky Roads treat!
Oh and rich tea instead of digestive biscuits make a nice alternative. Love this recipe, used malted milk biscuits, as didn't have any rich tea or digestives, with marshmallows and little sprinkles!
Only one problem, I put the mixture into the Rocky Roads and there was loads of butter on the top and around the sides, I used the right amount of butter like the recipie said, did anyone else have this problem? What's best to use, digestive biscuits or rich tea?
Could you please tell me what dimensions the baking tray should be?
